Summer Squash Casserole with Pecans

This is a southern recipe, so that would explain the 1/4 cup of butter, cheddar cheese, and pecans used in this recipe. You can use zucchini squash or yellow squash or a little bit of both.

Ingredients
  • 1 pound summer squash, sliced
  • 1/4 cup butter
  • 1/4 cup chopped green bell pepper
  • 1 tablespoon white sugar
  • 1/2 cup chopped onion
  • 1 egg
  • 1/2 cup mayonnaise
  • salt and pepper to taste
  • 1/2 cup shredded Cheddar cheese
  • 1/2 cup pecans, chopped
  • 1/2 cup bread crumbs
