Roasted Yellow Squash Salad


Roasting vegetables is one of the easiest and tastiest ways to prepare vegetables.

In this recipe, you will slice yellow squash into 1 inch rounds and place them onto a rimmed baking sheet with the 6 garlic gloves. Then simply drizzle with olive oil and sprinkle a little coarse salt and pepper. Bake at 450 degrees, and a exciting side dish is done.

  • 5 pounds yellow squash, sliced into 1-inch-thick rounds
  • 6 cloves garlic
  • 3 tablespoons olive oil
