This light salad is unique and a welcome change from the same old salads. It calls upon Parmesan cheese, sugar snap peas, fresh lemon juice, olive oil, and orzo. For those of you who have never had orzo, orzo looks dried rice, except that it is thicker and plumper looking, and it tastes like pasta. You can buy it at your local grocery, usually in the Italian section, or you can buy it online.
The ingredients are as follows:
- 1/2 pound orzo
- 1 pound sugar snap peas, trimmed and halved crosswise
- 2 small yellow squash, halved lengthwise, and cut crosswise into 1/2-inch pieces
- 3 tablespoons fresh lemon juice
- 2 tablespoons olive oil
- 2 tablespoons Parmesan cheese, finely grated
- Coarse salt and ground pepper
