Spanish Yellow Squash

This is a healthy and good tasting dish that you could serve over rice. Add extra garlic or hot sauce to spice it up a bit. Enjoy.

Ingredients

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 3 medium yellow squash, sliced
  • 1 small yellow onion, sliced
  • 1 (14.5 ounce) can diced tomatoes, drained
  • 1/2 cup water
  • 1 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1 dash garlic powder
  • salt and pepper to taste

Yellow Squash Casserole with White Wine


In this recipe, you will want to cut 8 yellow squash into 1/2- inch slices and boil them for about 10 minutes. In a medium sized bowl beat 2 eggs with the white wine. Remove the squash from the boiling water, dabbing off the excess water. Add the squash to the egg wine mixture. Add the cheese and salt and pepper. Pour the mixture into a baking dish (9 x 9) and bake in oven for 1 hour at 325 F degrees.
